- I'm not sure if a white pizza has to mean one with white sauce,
- but here's a good one with *no* sauce (which is white to me!)

- HERB CHICKEN PIZZA
- ------------------

- Pizza dough for two 12" pizzas
- 3 Tbsp olive oil
- 2 chicken breasts, cut into 3/4" cubes
- 1/4 cup pine nuts
- 4 cloves garlic, minced
- 3 Tbsp fresh basil (or 1 Tbsp dried)
- 2 Tbsp fresh oregano (or 2 tsp dried)
- 2 Tbsp fresh cilantro (or 2 tsp dried)
- 1 medium red onion, sliced
- 1 1/2 cups grated Parmesan cheese
- 8 oz (2 cups) shredded mozzarella cheese

- In medium skillet, heat olive oil over medium-high heat.
- Add chicken, pine nuts, garlic, basil, oregano, and cilantro.
- Cook until chicken is no longer pink, stirring occasionally.
- Stir in red onion slices.
- Top each portion of dough with equal amounts of chicken mixture,
- Parmesan, and mozzarella.
- Bake in 425F oven for 13 to 20 minutes, or until crust is done.
